Ingredients
- 3/4 cup packed light brown sugar
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 2 large eggs
- 1 15 oz can pumpkin puree
- 1 12oz can evaporated milk
- 1 tablespoon vanilla extract
- 1 unbaked 9-inch pie crust
Instructions
- Preheat oven to 425° F.
- In a large bowl, add eggs and pumpkin and whisk until combined, Next add the sugar and spices and whisk until incorporated. Finally, gradually add the evaporated milk, bourbon and vanilla extract until combined.
- Pour the mixture into unbaked pie shell.
- Bake for 15 minutes at 425° F. Then reduce oven temperature to 350° F, and bake for an additional 40 to 50 minutes or until toothpick comes out clean.
- Cool on write rack for 2 hours, then refrigerate until ready to serve.
- Serve with boubon whipped cream or your desired toppings.
